Beverly Reep’s Christmas-Time Mexican Casserole: A Cherished Holiday Tradition

Many years ago, during my dad’s first years serving as Warren Mayor, my mom, Beverly Reep, began a holiday tradition that brought people together in the best way possible—through food. Every year, she hosted a Christmas party for City employees at our home ahead of Christmas. Instead of serving the usual holiday dishes, she opted for something different: her signature Mexican Casserole.

The dish was always a hit. Guests would rave about it, and I came to look forward to it as much as the party itself. When I moved into my own home, Mom gifted me a recipe book filled with her most beloved recipes. At the time, it seemed amusing—after all, I lived next door and could eat at my parents’ house anytime I wanted. But that recipe book quickly became a treasure.

When Mom passed away in 2020, her recipes took on even greater meaning. Thanks to her thoughtful gift, I’ve been able to share many of her best dishes with my wife and sons, keeping her memory alive in our home. One of my favorites is her Mexican Casserole, which I’ve come to call Beverly Reep’s Christmas-Time Mexican Casserole.

This dish has become a staple in my holiday celebrations, and I’d like to share it with you this Christmas season. It’s simple, delicious, and sure to bring joy to your table.


Beverly Reep’s Christmas-Time Mexican Casserole

  • 1 can chili with beans
  • 1 can enchilada sauce
  • 1 can Rotel
  • 1 small package ground beef (Rob’s hint: I love it with ground venison as well)
  • 1 package medium shredded cheddar cheese
  • 1 package tortilla chips

Instructions:

  1. Brown the ground beef and drain.
  2. Mix the meat, chili, enchilada sauce, and Rotel.
  3. Line the bottom of a casserole dish with tortilla chips.
  4. Top with the meat mixture, then add shredded cheddar cheese.
  5. Bake at 350°F until bubbly.

Although Mom never did, I like to garnish mine with fresh cilantro and a squeeze of lime juice. It pairs wonderfully with a layered Mexican salad.
